Our chefs arrive with the evening already in mind. Choose the barbecue, where Nha Trang oysters glisten with masago, pomfret is salt-grilled with Vietnamese basil and Australian flank steak meets rosemary over the coals. Or let the night unfold in four courses: salmon crudo bright with citrus, a clear beef consommé with foie gras and truffle, Beef Wellington, and a final, gentle note of Cam Lâm mango sticky rice.
By morning, breakfast awaits and the sea is still there — this is a stay of two nights or more, and there is no hurry at all.
